苦酒是什么？
苦酒，即低度醋酒。古人以粮食酿酒自用，用大陶缸储存，今有的农村仍有此传统，常一年也喝不完。
久而久之，酒中少量乙醇氧化成为乙酸，沉于缸底，故缸底之酒，含有醋，当然不如缸面之酒好喝。缸底虽有醋，但其浓度比烹饪用醋低，酒中有醋，醋中有酒，分明舀自酒缸，故称为苦酒。
苦酒是什么？
苦酒，是由优质侗禾糯精酿成的饮料，又称吊酒，系一种不用烧的酒。其方法是：把糯米蒸熟，晾冷放入甜酒曲，置入大坛内酿制。待发酵后，滤去酒糟，纯甜酒水对半掺入冷开水存入大坛中密封，半个月后即成。
还有一种是“重阳酒”，即在九月初九那天酿造，放到过年才吃。那时酒成浆状，苦微甜，被人们誉为“土茅台”。它酒质淳净，纯正可口，酸甜协调，回味深长，含有多种氨基酸、葡萄糖，人称“液体蛋糕”。
